Yes, I know, that doesn’t seem really sexy like this “onion tart”… And worse when that comes from a Frenchie like me but, actually (and even more with this wintery Autumn), it’s really really yummy! … And gluten free for those who are interested…

For the crust:

  • 80gr corn flour
  • 100gr buckwheat flour
  • 40gr chickpeas flour
  • 2 tbsp coconut oil
  • 1 tsp garlic paste/crushed garlic cloves
  • 2 tbsp yogurt
  • 10cL milk
  • Mix all the ingredients together until getting a dough ball then place it in the fridge for at least 1 hour
  • Roll the dough with about 5cm thick
  • Cook the dough at 200*C for 10min then 180*C for 15min

For the onion:

  • 3 onions (chopped or sliced, following your taste)
  • 2 shallots (chopped or sliced, following your taste)
  • 3 tbsp creme fraiche
  • 2-3 tbsp mustard (following your taste)
  • 1 tbsp garlic paste/crushed garlic cloves
  • 2 hand-full spinach leaves
  • Pre-Cook (in the microwave for example) onions, shallots and garlic
  • Mix the creme fraiche and mustard together
  • Put the mix creme-mustard and onions, shallots, garlic, spinach on the pastry and cook at 180*C (with an aluminum foil on the top of the tart) for 15min
  • EAT!!!
